Don't let that description fool you. This is actually a great cookie - not a boring, tasteless alternative.
Here's what you need:
1 ripe mashed banana
1/3 cup melted coconut oil (heat over low heat - takes about 1 minute)
1 cup unsweetened shredded coconut
2 cups almond flour
1/2 tsp baking soda
1/2 tsp agave
1/4 cup raw cacao beans or nibs (optional)
1/4 tsp cinnamon
1/4 tsp salt
1 tsp vanilla
Here's what you do:
Preheat oven to 350
Mash banana
Finely chop the raw cacao
Combine dry ingredients and wet ingredients separately
Add wet ingredients to dry and mix
Form one ball of dough
Put in fridge for 30 minutes
Get out your cookie sheet - leave it ungreased
Form small balls of tough about a tbsp or so large, and then flatten a bit with the palm of your hand as you put on the baking sheet
Bake for 15 minutes
Let cool in freezer for 15 minutes
I stored mine in the fridge but you can leave out if you prefer

Calories - 190, Fat - 13, Carbs - 7, Protein - 3, Sugar 1.1 gram
Remember, everything used in this recipe is actually good for you. It's not like you are eating 13 grams of fat worth of fake, greasy, bad for you food - everything has nutritious quality.

I put this in the smoothies a lot and add a little agave to sweet it up. Delicious!!!
These cookies are really delicious. If you find you'd like them to be sweeter, you can add more agave, but I like them just like this! I had 2 guys taste test - Louis and a friend, and both really liked. They only lasted about two days in our house because I couldn't stop snacking on them!! I think I've mentioned before but the last couple of times I had an over-abundance of sweets at a birthday party or celebration of some sort, I got the worst headaches from the sugar. I love these because I can eat them and stay headache-free, guilt-free, and still enjoy a really delicious and satisfying treat.
