Low Carb, Healthy, Stuffed Peppers

I'm always looking for recipes to tweak that will satisfy what we are craving, can be made pretty quickly after a full day of work, and are healthy. Lately we've been trying to stay away from too many carbs especially for dinner. For these delicious peppers I added extra garlic and veggies, and left out the rice.

Servings: 4

Here's what you need:
Cup of chopped spinach
Cup of mushrooms, any kind
1/2 cup white onion
Lots of garlic
1/4 cup fresh basil
4 bell peppers
1 lb ground meat
1 cup of tomato sauce--you can heat extra for a topping if you'd like
Olive oil
1-2 cups of mozzerella cheese
2-3 tablespoons of fresh parmesan cheese
Crushed red pepper

Here's what you do:
Chop spinach, mushrooms, onion, basil, and garlic
Remove tops and seeds from bell peppers, boil for 3 minutes
Sautee onion and garlic in olive oil for 3 minutes
Add meat and cook thoroughly
Add mushrooms, spinach, basil, 1 cup of tomato sauce, salt, pepper, crushed red pepper and parmesan
Keep on low heat, stir occasionally until spinach has wilted
Arrange peppers in a greased baking dish
Fill peppers (i put a little mozzarella in the bottom of each before the meat)
Top with cheese
Bake for 25 minutes or until cheese begins to brown.

*This batch i took out a little earlier than normal because i was starving.

 
 
 
 
 
serve with a side salad.
*option: last time i put extra sauce in the baking dish and that was delicious too. just depends on your mood!
